Turkey and Sausage Jambalaya with Easy Kale
This jambalaya is actually just my Spanish Rice recipe, with andouille sausage and a smoked turkey leg added in with the rice as you cook it. Easy and awesome, however not as vegan-friendly haha sorry vegans!
Kale is super easy. Wilt it in a pan with olive oil over medium heat until it goes a little brown on the edges and add a slurp of chicken stock and cook it down until most of the stock is gone. Kale is super yummy by itself to me, so all I added was a little salt! This recipe is far more vegan-friendly, just use veggie stock :)
Dress Up Your Annie’s Mac and Cheese
1 package of Annie’s peace Parmesan mac and cheese
2 Italian sausages
1 teaspoon of basil paste (you know that tube of fresh crushed basil you can buy, that stuff is sooooo useful!)
extra shredded parmesan
Make the mac and cheese according to the package directions. While you are boiling the noodles, boil the sausages in a separate pot. Cut the boiled sausages into slices and fry them in a little olive oil until browned. Add to the finished mac and cheese, then add a squeeze of basil and grate extra Parmesan over the top. Yummy!
Spanish Rice, Cuban Beans and a Sweet Potato!
Spanish Rice
1/2 an onion, chopped
2 cloves of garlic, chopped
1 cup of white rice
1 cup of chicken stock (or veggie stock)
1 cup of tomato sauce
cumin, coriander, paprika, and chili powder
Fry the onions and garlic until soft over medium heat in some olive oil. Add about a tablespoon of all the spices, except chili powder which you can add to your taste. Then, fry the UNCOOKED rice in the onions and spices, until it browns. Then add the chicken or veggie stock and tomato sauce, turn the heat to high, and bring to a boil. Then lower the heat to low and cover and cook for 20 mins. After the rice is cooked, add chopped pickled jalepenos if you want more heat!
Cuban Beans
1/2 an onion, chopped
1 can of black beans
cumin, garlic powder, and paprika
Soften the onions in olive oil (or butter) and then add 2 teaspoons of each spice. Drain the can of beans, and add to the onions. Add a little extra oil and cook over low heat until the beans are mushy. Top with greek yogurt or vegan sour cream if you are a vegan.
Baked Sweet Potatoes
Quarter a large sweet potato, drizzle it with olive oil, and bake it at 400F for 40 mins. Then season to your liking. Most people would probably do sugar and cinnamon but I prefer salt and paprika and pepper.
Two Fried Eggs with Paprika, and a Sriracha &Cheese Quesadilla
This is quite as simple as it sounds. Melt some cheese over a tortilla, with a few drops of Sriracha scattered about, and fold it in half. Fry two eggs sunny side up, and add salt, pepper, and paprika. I decided to have my breakfast that day with a Blue Moon Summer Honey Wheat Beer. Not sorry :)
A Sriracha Omelet
5 eggs for 2 people or 2 eggs for 1 person
a handful of fresh spinach leaves
Havarti cheese
salt and pepper
Sriracha, of course!
Wilt the spinach with a little olive oil over medium heat. Beat the eggs in a bowl and add enough Sriracha sauce to turn them orange, or more if you like more heat. Add eggs to the spinach, and grate the Havarti cheese over it. When the omelet is mostly cooked but the top is still wiggly, flip it gently to cook the other side (or put it under the broiler for a few moments.) Serve hot!
Coconut Curry Rice and Beans
1 cup of white rice
1 can of coconut milk
1 tablespoon of curry powder
salt and pepper
1 can of black beans
shredded cheddar cheese
Greek yogurt
Bring the can of coconut milk, plus a little more than half that can full of water, to a boil. Add the rice and stir, turning the heat down to low. Cook for 20 mins until water has evaporated and then fluff with a fork and transfer to a bowl. Add salt, pepper, and curry powder and mix thoroughly. Drain the can of beans and warm on the stove or in the microwave, and add to rice. Top with shredded cheese and Greek yogurt and salt and pepper to taste. To make this recipe vegan, replace the cheese and Greek yogurt with your favorite vegan cheese and/or vegan sour cream.
Frittata!
6 brown eggs, beaten
1/2 an onion, sliced
1 tomato, sliced
a bunch of kale, chopped
6 slices of bacon, chopped
a handful of shredded cheddar cheese
a handful of crumbled feta cheese
salt and pepper
Saute the onions in a little olive oil and medium heat until they are soft and slightly browned. In a separate pan, brown the bacon. Then add the tomatoes to the onions, and soften them. Then add the kale and wilt it, which will only take a few minutes. Then add the bacon to the veg and pour the eggs over it. Add salt and pepper. When the bottom of the eggs has gotten solid, sprinkle the cheeses over the top and take the heat down to low. Allow the omelet to cook slowly, the bottom should be quite brown. When the top of the eggs is just a little wiggly, turn on the broiler in your oven to HIGH and stick the omelet (still in the pan!) under the broiler. Keep the light on, and after a few minutes the top of the eggs should be cooked and the cheese bubbly. Serve hot or cold, goes well with sour cream or Greek yogurt and toast.
Pesto Pasta with Peas
2 cups of rotini pasta
1 cup fresh basil leaves
2 garlic cloves
salt and pepper
1 tablespoon of ground corainder
olive oil
1 package of frozen peas
Boil the pasta in salter water with a little olive oil in until al dente. In a blender or food processor, add basil leaves, garlic, coriander, and salt and pepper. Blend, adding a stream of olive oil until the pesto forms a sauce-like consistency. Thaw the frozen peas in a small saucepan over medium heat and with a little water. Strain the noodles and peas, and toss with the pesto. Serve hot!

Homemade Pizza!
1 ready pizza crust of your desired type, I chose regular because I wasn’t feeling whole wheat :P
1 jar of basil and garlic marinara sauce (or make your own)
1 package of Thai cured sausage
2 balls of fresh mozzarella
roasted red bell peppers
dried basil
salt and pepper
Preheat oven to 400F. Layer sauce, sausage, chopped bell peppers, and cheese on your pizza crust, as well as anything else you’d like! I recommend onions, mushrooms, spinach, pesto, sundried tomatoes, fresh tomatoes…. anything really. Dust with basil, salt and pepper. Feel free to add another type of cheese that is a little saltier, like Havarti or Gouda.
Bake for 20 mins until brown and melty!
